Okay, I'll check about the 24th. I can do it that day. So Bryan and I will split a half, and meet at the farm to cut and wrap it, and Delairen will get the other half and the organ meats, which she'll pick up and take home to cut.

Do I have it all right?

No, I don't need any organ meat. Although I'll ask my neighbor if he wants the "dog food". Lisa says the weekend of the 17th is out, but how about the following weekend? And if it is just the 3 of us, I can split a half with someone.

Hey Marlene,

If we're looking at Weekends in July, the first day that would work best for me would be July 17th - I have plans on the 10th that I wouldn't be able to get out of.

I'll skip the Trachea, lungs and Pancreas (no dog), but as for the rest please do include it. :-)

Delairen: Lisa says you can pick up your half of the hog the same day we do the cutting. You can have organ meat, head, feet, ears, whatever you want, except stomach and intestines. Just let me know, so I include it in your order. (Trachea, lungs, pancreas are available if you want it for dog food).

What day will work for you as a pick up?

Bryan: if you want organ meat, chime in. I'll let you and Delairen haggle about that. As soon as you let me know what day you can do the cut & wrap, I'll let Lisa know.

They also have rabbits, and lamb. I may order a rabbit or two, but I won't have room for lamb, at this point.

I'll skip the organ meat. Berkshire is fine with me.

When can you make it? My July is woefully empty after the 7th. I can schedule just about anything, at this point.

Actually, Marlene, you brought it up, so you get first pick. Which leaves me out, since I was last to speak up!

Hopefully Oliver or Dawn or some others will speak up.

As for me, I'd prefer the bull Berkshire pig. And I can't make anything on July 10.

In my experience, if you go through a butcher, it will come packaged and frozen, mostly because making ham and bacon takes at least a week. If you skip the butcher, I imagine you can get it fresh.

They say you can get the organs if you request it early. you can have mine :-)

Yes, that's the right website. I'm checking to see if you can pick up your fresh meat the same day we do the cut and wrap. That won't be until July. I assume you don't want to do the cutting there?

Bryan: I'm not sure where the ranch is. I'm checking on that.

I was also wondering what the lead time is, and would it be possible to get the organ meat included... :-)

Is their site http://www.winddancerranch.us/ ?

Because if so, it indicates on the site that the meat is frozen - which wouldn't really work for me.

I am on the fence for a half vs. quarter. I can split my half with you.

Also, where is Wind Dancer farm?
