I'm sorry for the three comments in a row... But I've been reading all the comments here and it seems there are a lot of people who don't know where to start, or don't have time for all the coordination. It's totally understandable - I was in the same position this last year.

Now by all means I don't know everything but I am pretty seasoned when it comes to buying large quantities of meat. I'm stepping forward as a resource.

My 6'8 husband and I started eating more meat as a way to achieve a healthier diet. I started driving 5+ hours out to an out-of-the-way butcher shop to pick up great quality meat for us. Pretty soon, I had friends asking me to pick up items for them. Then, the friends of those friends started ordering too. Now we have a large enough group of people that we order wholesale - we get wholesale prices and we get the flexibility to get only the cuts of meat that we want. Want steak? No need to order a 1/2 or 1/4 cow.

We pick at least 5 items each month that we want, and as a group, we always meet the order minimums for wholesale. I pick up the orders then deliver to the Bay Area.

I believe that 1.) healthy eating starts with quality ingredients, and 2.) doesn't have to be expensive.

Typically, we ask that each member promises to buy $50 per month, as a way of guaranteeing that we"ll reach our minimum purchase from the wholesaler. However, if you want to be a member without a minimum purchase, please just email me and I'll hook you up with an account. The booth at the Palo Alto farmers' market on California is Old Creek Ranch.  They sell lard, chicken fat, and (I think) tallow as well.

I have seen lard at the Palo Alto market Sundays on California at the grass fed meat store, (forgetting the name). They make stock as well.

You can read past posts or email Mel directly...he comes once a month to the bay area and sells whole,half and ground lamb. Mel Thompson
