My boyfriend comes from a hunting family that hunted to eat. They always tried to find an old, past reproduction age elk cow as they said that was the best eating elk around. Having tasted it I would have to agree. We were lucky enough once to purchase an old, past reproduction age cow buffalo and the meat was excellent. The older cows are not quite as tender as an 18 month old feedlot steer but the difference is not readily noticeable unless you really try. I would think you will be very pleased with this cow.

Here in the US, where the goal is to produce the most meat in the shortest period if time with the least amount of money, beef cows are usually slaughtered at about 18-23 months of age. Grass fed cows grow slower than those on grass. Grass fed cows I believe can be slaughtered at 3-4 years of age, depending on breed. I will follow this up with some sources soon. Some people do not want an older cow because they think the meat is tough This is certainly the case with say a two year old steer, but not the case with female cows raised on grass. I have spoken with the farmer that I am getting this cow from and they say they have slaughtered several cows of this breed and age and had great tasting meats
