I am interested in a professional meat butchering class. I have butchered a goat before (with help) and I currently butcher all of my chickens, turkeys, rabbits and ducks. I have taught a few people how to do the small animals but I would LOVE to learn more about this craft from a professional.
If you get a class together, I would be very interested in attending. I think I could get about 3-4 of my farmer buddies together too. We live on a small farm and we could certainly hold the class here if folks were willing to travel just east of Sacramento. We held 7 farm tours this weekend and some of them traveled here from the Bay Area; a police commissioner and restaurant owner.
